The Olympia Oyster Knife with 2-1/2 inch x 5/8 inch stainless steel blade with our tough "Murphy Green" recycled polypropylene plastic handle.
This shucker was designed in collaboration with Marco Pinchot of Taylor Shellfish Farms to open Kumamoto & Shigoku oysters. The blade has a short (1") four-sided eased edge grind that gently tapers to the flat unground blade. Superior to other knives when opening these challenging small "pearls", the Olympia will handle the larger East & West Cost varieties beautifully too.
The handle is made from 100% recycled plastic called ECOgrip®, which offers the same benefits with the ease of cleaning and durability for a more environmentally friendly product for professional shuckers, restaurants, and home use.
